Cherries are selectively harvested by hand to ensure optimal sugar
content. The cherries are then floated to further select only the
densest, highest quality for processing. After de-pulping the coffee
undergoes a controlled wet-fermentation for an extended period of
72hrs, followed by thorough washing. The parchment coffee is then
sun dried on raised beds.
